CAPTAIN JIM’S FAMOUS CHICKEN
NOODLE SOUP
In a large stockpot, boil A FULL CHICKEN (HEN) 60 minutes
in about 2 gallons of water. Then use a strainer spoon
to remove all the bones and excess fat (leave all the meat!). This
process needs to be very thorough. You
have now created a terrific “stock” for your
soup!
Coarsely chop up one medium bag of carrot, one medium bag
of celery and one half of a medium bag of onions. Add
to the stockpot.
Add 4 table spoons of garlic powder, 1 stick of butter,
along with a tablespoon of oregano and a tablespoon of black
pepper.
Bring to a boil, then reduce heat and cook on medium heat
one hour. Then, add a large bag of your favorite noodles
(I suggest wheat noodles that are very low fat). Return
to a boil, then reduce heat and simmer for 30 minutes longer. Feel
free to add a little extra water if you feel you need to.
This recipe is terrific and makes a huge amount of soup. Salt
and pepper to taste and enjoy!
